Confession – I really love to bake. I really love to cook as well, but there is something about baking that really challenges me a lot more than cooking. It is probably because there is a 50/50 chance that it will turn out OK. I am not the best baker, but I have gotten better over time. I still am horrible at icing. One time I tried to use a bag, and Charlie came in and found me crying and covered in icing. I haven’t tried that again. I just can’t ice things well!
I don’t get to bake a lot. Actually let me correct that statement – I choose not to bake a lot. I don’t have any children to bake for, so Charlie and I end up eating it all ourselves. So I have been keeping it to about once a month I bake something – you know, moderation. Of course, it is a little different if there is a holiday or something (or Charlie begs…) but in general, I bake something about once a month.
So these are a few of my favorite baking recipes that I have made. Some of them I have been making for years, and others are new favorites.
I have been making Martha Stewart’s cheesecake for YEARS. Probably a good 6 or 7 years. It is amazing and wonderful. It is also time consuming and somewhat difficult. But it is totally and completely worth it. This is probably Charlie’s favorite.
I recently discovered Sally’s Baking Addiction, and it is my new go to source for baking recipes. Everything I have made from her so far has been fantastic. The first thing I made was oatmeal raisin cookies. I love oatmeal raisin chocolate chip cookies, but I couldn’t find anything like that. But the one I used had optional walnuts, so I did chocolate chips instead.
The second recipe I tried was another cookie recipe – black and white cookies. They were really good too. And, they were even better the next day!
I really love anything mint or mint chocolate chip. So I decided most recently to make these mint chocolate chip cupcakes, also from Sally’s Baking Addiction. They were crazy good, and I want more now.
