Sundays used to be the worst for me. We generally spend our Saturdays doing house projects. So on Sunday, I would get up, run errands, go to the grocery store, maybe get something to eat. Then, I would come home, clean the house and then cook. It would be 8:30 before I would finally be done.
Recently, I did some adjusting to my routine so my Sundays aren’t quite so bad (don’t get me wrong, they still aren’t fun). I started doing my errands and grocery shopping on Saturday, which means I don’t usually leave the house on Sundays.
Another thing I started doing was cooking breakfast on Sunday mornings. We eat a big breakfast, and then we aren’t even hungry for lunch. It has been fun for me, because I haven’t cooked a lot of breakfast food, so I have enjoyed cooking all new recipes.
They also have been challenging. I am a terrible pancake maker. I have had a really hard time with knowing when to flip them. And mine are never round, more like oblong. But when I don’t tear them up, they taste pretty good!

These are by far the absolute best blueberry muffins I have every eaten. Just try them. They are amazing!
I made these for New Year’s, and although they take a little time, they are so worth it. You need to start them the night before so there is a good bit of prep work.
Every time I make these, I sing Jack Johnson. Actually, I pretty much sing “Banana Pancakes” every Sunday no matter what I am making. These are fantastic!
These are really good, but keep in mind they have to sit overnight. They are delicious with maple syrup on top.
These have to sit overnight too. My only problem with this one is that it makes a really big dish, which is great if you have guests, but a lot of food if it is just two people (which is great if you are really hungry!)
