I love good, cozy meals when it is cold outside. And it has been SO cold here lately. Soups, anything in the crock pot, and yummy comfort foods are all favorites this time of year.
These are just a few of my favorite wintertime recipes:
What is better than a bowl of chicken noodle soup when it is freezing outside? It is so delicious and comforting. This creamy chicken noodle soup is perfect. Pretty much any recipe from Gimme Some Oven is sure to be good.
I have been making this crock pot chicken dumpling recipe for several years now, and it is one of Charlie’s favorites. It is so easy and so good. You pretty much dump everything in and just let it go. The dumplings are store bought biscuits that you quarter and throw in at the end. So good!
Another really good Gimme Some Oven recipe – 10 minute spinach lasagna. This is a great vegetarian meal. I add some ground turkey to mine because Charlie likes meat, but I have also added mushrooms to it sometimes and that is really good as well. I make this all year, and I love how quick it is to make. It is also a great make ahead meal – put it together on Sunday and then just put it in the oven when you are ready to eat it during the week.
These salisbury steak meatballs are so delicious, and a really great comfort food. You can serve them with mashed potatoes, rice or even egg noodles. I don’t eat beef, so I use ground turkey instead.
Another great winter recipe is this chicken lombardy. It is really easy, really delicious and not super time consuming. Perfect for those cold winter nights!
And of course, chili. Lots of chili. I shared my favorite chili recipe a while back, and we eat it all of the time when it is cold. I’ve probably made it 10 times since it started getting cool in the fall, but we never get tired of it.
