I’ve mentioned before that I am funny about certain foods – I don’t really eat them unless they are a certain recipe. Potato salad is one of those things. Actually, to be really honest, I am like that with most “salads” – chicken salad, tuna salad, pasta salad… slaw too. Some of it stems from having an allergy (people always want to put nuts in everything now!), some of it is because they are too sweet. I realize I sound like a super picky eater. I don’t consider myself one, I just like certain things prepared a certain way.
Getting back to the important topic of this particular potato salad – my mom has been making it for years. It is super delicious, and really easy to make. It is the perfect side for hamburgers, hot dogs, BBQ, chicken … pretty much whatever you are planning to make for Memorial Day.
It doesn’t use too make ingredients (which is always nice) and the longest part is cooking the potatoes & waiting for them to cool. Plus, you can easily make this ahead of time and let it chill out in the fridge (I think it might be one of those that tastes even better the next day).

A few notes –
The original recipe calls for sweet pickle relish, and that is what I put in the recipe. However, we usually use dill pickle relish instead. It makes the potato salad a less sweet, which is how I prefer it. But when I made it this time, I used the sweet pickle relish and Charlie seemed to really like that. So it is whatever you prefer.
Also, I don’t bother with the parsley. I honestly usually leave parsley out of things, if it is mostly just a garnish. Is that weird? It tastes just as good without it to me, but that is totally up to you whether you use it.
